After oil is hot, add 2 teaspoons jeera, 1/8 teaspoon hing, 1/3 cup very loosely packed green chillies cut in bite size peices, 10 curry leaves, 1 tablespoon sesame seeds ( teel ), 4 tablespoons coarsely crushed or ground peanuts, 1/4 teaspoon haldi & mix well.

Reduce the flame to 3/10 setting.

Add the potatoes & all the spices to the sabzi - 2 teaspoons salt, 1.5 tablespoons dhaniajeera (dhaanajeeru), 1/4 teaspoon Chat Masala, 1/4 teaspoon Garam Masala, 1/4 teaspoon Black pepper powder (adjust these masalas to taste)
