MIXED VEG (VAGHAARELI) KHICHDI

RECIPE SERVES 3

INGREDIENTS

1 cup Rice (Masoori Rice works best for Khichdi, but if you do not prepare it so frequently then its best to use whichever rice is handy)

1 cup Split Green Moong Dal (with skin)

7 cups water

3 teaspoons salt, 1/4 teaspoon haldi, 1 teaspoon red chilli powder, 1 teaspoon any spicy pickle

4 tablespoons ghee/butter, pinch of hing, 1 clove & a small cinnamon stick (taj) for better flavor & aroma, 1 teaspoon rai, 3 dry red chillies

1/2 tablespoon garlic paste, 1 teaspoon ginger paste, 1 teaspoon green chilli paste

Cut in cubes ~ 2 small potatoes, 1 red onion, 1 tomato, 1/2 carrot, 1/4 cup green beans cut, 1/4 cup peas

1 tablespoon peanuts

METHOD

1. Pick rice & split moong dal for stones. Mix rice & split green moong dal (with skin) in a big bowl. Wash under running water 3-4 times. Soak the khichdi in water for 45 minutes.

2. After 45 minutes, heat 7 cups water in a saucepan till it boils.

3. Heat 4 tablespoons ghee/butter in a pressure cooker pan on 7/10 flame setting. Add 1 clove & a small cinnamon stick (taj) for better flavor & aroma. Add 1 teaspoon rai, 3 dry red chillies. Add 1/2 tablespoon garlic paste, 1 teaspoon ginger paste, 1 teaspoon green chilli paste

Add the vegetables ~ 2 small potatoes, 1 red onion, 1 tomato, 1/2 carrot, 1/4 cup green beans cut, 1/4 cup peas, mix.

Drain all the water out of the khichdi (the water that khichdi was soaked in), then add the khichdi & the boiling 7 cups of water.

Add 3 teaspoons salt, 1/4 teaspoon haldi, 1 teaspoon red chilli powder, 1 teaspoon any spicy pickle, 1 tablespoon peanuts, mix.

4. Close pressure cooker lid, cook to 4 whistles.

5. Open lid after cooker cools down completely.

Serve hot with plain yogurt / buttermilk / Gujarati Kadhi / hot Tomato Soup / any sabzi that has gravy in it which will blend well in the khichdi.

Also serve Onion Tomato Kachumber & Papad.
